The ingredient selection changes daily. Freshness, rarity, and excellence dictate what arrives from the fish market directly to the plate. Among the highlights are Algarve’s angulata oysters, eels, spider crabs, alistado prawns, crystal prawns, baby horse mackerels, and the iconic red snappers from Sagres. From the Azores come prized species such as amberjack, red sea bream, mackerel, alfonsino, and greater amberjack. Portugal’s coast also reveals itself in the Peniche sea bass, turbot, and fresh squid.
At the heart of the sushi bar, each piece is crafted with detail — from bluefin tuna to toro, alongside rare Japanese wagyu, fresh wasabi, Italian truffle, and Norwegian scallops. The menu also features cooked and grilled creations over binchotan, the traditional Japanese charcoal that reaches extreme temperatures and imparts a deep, distinctive flavour.
